Electron Paramagnetic Resonance (EPR) spectroscopy is a spectrographic method to study the structure, dynamics and spatial distribution of materials containing unpaired electrons, which can provide in situ and nondestructive information of Electron spin, orbit and atomic nuclei at microscopic scales.
When a substance containing unpaired electrons is placed in a static magnetic field, the emission or absorption of electromagnetic energy by the substance can be observed if a certain frequency of electromagnetic signal is applied to the sample. By analyzing the variation law of electromagnetic wave signal, the characteristics of electron and its surrounding environment can be analyzed, which can be used for material structure analysis and other applications.

Application
Electron paramagnetic resonance can be used to obtain accurate, rapid and non-destructive information about the composition and structure of matter. Materials containing unpaired electrons are widely distributed, such as isolated single atoms, conductors, magnetic molecules, transition metal ions, rare earth ions, ion clusters, doping materials, defect materials, biological free radicals, metalloproteins, etc. Many substances do not themselves contain unpaired electrons and produce unpaired electrons when excited by light. Therefore, electron paramagnetic resonance (EPR) technology is widely used in physics, chemistry, biology, geology, archaeology, materials science, medical science and industry and other important fields.

Features
Irradiation food monitoring
Food irradiation technology plays an irreplaceable role in ensuring food health, safety, reducing pollution and chemical residues. Under the action of ionizing radiation, the covalent bond of internal compounds will split and produce a large number of radicals. Electron paramagnetic resonance technology relies on the detection of long-lived radicals produced by irradiation to identify foods, such as irradiated foods containing cellulose, bone and crystal sugar.
